Recipe - 🍛 Bulk-Cooked Curry
There is no doubt that the above picture looks a little messy, but seeing as I'm cooking for myself (and wrote this blog post months after the fact) I figured it doesn't matter. 😁
Serves 5-7
Ingredients
- 1kg Chicken
- 2 x Onion
- 2-3 x Pepper
- 500g Mushrooms
- 1 x 400ml can of coconut milk
- 1 x 400ml can of chopped tomatoes
- 4 x Garlic Cloves (or garlic powder, depends how lazy you are)
- 1 jar of curry spice paste (not sauce!)
- 1-2 handful of lentils (optional)
- Curry powder (optional)
- Garam Masala spice powder (optional)
- Cumin powder (optional)
Method:
1. Fry chicken until browned
2. Whilst chicken is frying, dice onions, slice peppers and mushrooms, and crush garlic
3. Add onions and fry until translucent
4. Add remaining veg and garlic
5. Add spices (garam masala, curry powder)
6. Mix thoroughly and fry for a couple more minutes
7. Add curry spice paste, chopped tomatoes, coconut milk, and lentils. Mix well
8. Simmer for roughly 30 minutes
9. Serve with rice (100g per serving) and naan bread (optional)
